RECIPE FOR APPLE BARLEY SOUP
Title: Apple Barley Soup
Category: Vegetarian Soups-stews
Serves: 6

Ingredients:
2.00lgOnions; thinly sliced
2.00tbVegetable oil
3.50cVegetable stock
1.50cApple cider
OR- unsweetened apple juice
0.33cPearl barley
2.00lgCarrots; diced
1.00tsThyme
0.25tsDried marjoram
1.00Bay leaf
2.00cUnpeeled chopped apples
0.25cFresh parsley, minced
1.00tbLemon juice
0.25tsSalt

Instructions:
In a small soup pot, saute onions in oil over medium heat for 5 min.
, stirring constantly.
Reduce heat, cover and cook, stirring frequently for 10 min.
or until onions are browned.
Add stock, cider, barley, carrots, thyme, marjoram and bay leaf.
Cover and cook for one hour or until barley is tender.
Add apples, parsley and lemon juice.
Cook for 5 minutes or until apples are slightly soft.
Discard bay leaf and serve.
