| RECIPE FOR MADELEINES |

Ingredients:
| 1.00 | c | Unsalted butter | | 2.50 | c | Powdered sugar, sifted | | 4.00 | | Eggs | | 1.00 | pn | Salt | | 0.50 | ts | Vanilla extract | | 0.25 | ts | Orange extract | | 2.00 | c | All-purpose flour |
Instructions: PREHEAT OVEN TO 350F.
Lightly grease madeleine molds.
In an electric mixer, cream butter until smooth and add sugar until incorporated.
Add the eggs 1 at a time, then add salt, vanilla extract and orange extract.
Add the flour and mix until incorporated.
Spoon about 1 1/2 teaspoons batter into each mold.
Place in oven and bake 15 minutes or until lightly browned.
Remove from oven and remove from the molds.
Let madeleines cool on a rack.
