RECIPE FOR UOVA TONNATO

Ingredients:
8.00Hardboiled eggs (not over-
Cooked), peeled & halved
Tonnato sauce
1.006-1/2 oz. can tuna, packed
In oil
2.00tsCapers
2.00tbCalvert's cedar street
Basil mustard
1.00tsAnchovy paste
2.00Cl Garlic, minced
2.00tbFresh lemon juice
0.75cExtra virgin olive oil

Instructions:
This dish makes a fine first course or a light lunch entree.
Place first 6 ingredients in a food processor or blender.
Puree.
With motor running, slowly drizzle in olive oil.
Place a bit of sauce on platter.
Place eggs over sauce cut side down.
Spoon over additional sauce and garnish with fresh basil leaves if available or chopped pimento.
Note: This is an extremely versatile sauce and marries well with many foods.
It has its origin combined with veal.
It is also marvelous over chicken.
Try using as a dip for fresh seasonal vegetables.
