| RECIPE FOR LEEK AND MUSHROOM TART |

Ingredients:
| | Pastry for 9-inch one-crust | | 3.00 | tb | Margarine or butter | | 2.00 | c | Sliced leeks, (about 1/2 | | | Pound) | | 1.00 | c | Coarsely chopped shiitake or | | | Other fresh mushrooms | | 1.00 | c | Shredded white cheddar or | | | Cheddar cheese (4 ounces) | | 0.75 | c | Shredded mozzarella cheese | | | (3 ounces) | | 3.00 | | Eggs | | 0.67 | c | Milk | | 0.50 | ts | Salt | | 0.50 | ts | Ground nutmeg |
Instructions: Heat oven to 475 degrees.
Prepare pastry.
Ease into tart pan, 9 X 1 inch, or pie plate, 9 X 1-1/4 inches.
Bake as directed; cool.
Reduce oven temperature to 350 degrees.
Heat margarine in 10-inch skillet over medium heat.
Cook leeks and mushrooms in margarine about 5 minutes.
Spread in tart pan.
Sprinkle with cheeses.
Beat remaining ingredients.
Pour over cheeses.
Bake about 35 minutes or until set.
6 SERVINGS; 360 CALORIES PER SERVING.
