Ingredients:
| 2.00 | | Pounds potatoes (about 6 med | | 1.50 | c | Mayonnaise or salad | | | Dressing | | 1.00 | tb | Vinegar | | 1.00 | tb | Prepared mustard | | 1.00 | ts | Salt | | 0.25 | ts | Pepper | | 2.00 | md | Stalks celery, chopped | | | (about 1 cup) | | 1.00 | md | Onion, chopped | | | (about 1/2 cup) | | 4.00 | | Hard-cooked eggs, chopped | | 0.50 | c | Thinly sliced radishes | | 0.50 | c | Chopped cucumber | | 0.50 | c | Chopped green bell pepper | | 1.00 | | Tomato, cut into wedges |
Instructions: Prepare and cook potatoes; cool slightly.
Cut into cubes (about 6 cups).
Mix mayonnaise, vinegar, mustard, salt and pepper in large glass or plastic bowl.
Add potatoes, celery and onion; toss.
Stir in eggs, radishes, cucumber and green bell pepper.
Cover and refrigerate at least 4 Before serving, garnish with tomato wedges.
10 SERVINGS (ABOUT 3/4 CUP EACH); 360 CALORIES PER SERVING.
