Ingredients:
| 3.00 | c | Water | | 0.75 | c | Dried garbanzo beans* | | 2.00 | tb | Vegetable oil | | 1.00 | c | Sliced mushrooms | | 2.00 | | Green onions (with tops), | | | Thinly sliced | | 1.00 | md | Carrot, shredded | | | (about 1/2 cup) | | 1.00 | | Cl Garlic, finely chopped | | 1.00 | tb | Lemon juice | | 1.00 | ts | Prepared horseradish | | 1.00 | ts | Prepared mustard | | 0.25 | ts | Salt | | 0.25 | ts | Pepper |
Instructions: *substitute: 1 cn (16 ounces) garbanzo beans, Drained Heat water and beans to boiling.
Boil uncovered 2 minutes; reduce heat.
Cover and simmer 1 to 1-1/4 hours or until beans are tender (do not boil or beans will burst); drain.
Heat oil in 10-inch skillet over medium heat.
Cook mushrooms, onions, carrot and garlic in oil about 4 minutes.
Stir in beans and remaining ingredients.
Cook about 5 minutes or until mixture is hot.
4 SERVINGS (ABOUT 2/3 CUP EACH); 160 CALORIES PER SERVING.
