| 0.50 | | Head romaine, washed and cut | | | Into bite-size pieces | | 0.50 | | Head boston lettuce, washed | | | And cut into bite-size | | | pieces | | 0.50 | | Head watercress, washed and | | | Cut into bite-size pieces | | 0.50 | lg | Cucumber, peeled and | | | Thinly sliced | | 1.00 | tb | Chopped dill | | | Dijon dressing | | 2.00 | | Egg yolks | | 7.00 | tb | Dijon mustard | | 0.50 | c | Red wine vinegar | | 2.50 | c | Olive oil |
Instructions:
This recipe includes a piquant Dijon dressing.
1.
Toss greens and cucumber together.
Sprinkle lightly with dill.
2.
Add 1 oz.
of Dijon Dressing per portion and toss well.
Turn onto chilled plates and serve.
DIJON DRESSING: 1.
Place yolks in bowl, add mustard and whisk a few minutes.
Add vinegar and whisk again.

Slowly add oil, whisking all the time.
This fresh green salad is crisp and cool looking.
