RECIPE FOR CHEESY HAM AND LEEK SOUP
Title: Cheesy Ham And Leek Soup

Ingredients:
2.00tbMargarine or butter
1.00cSliced leeks
1.00Cl Garlic, crushed
2.00tbAll-purpose flour
0.12tsPepper
1.00cHalf-and-half
1.00cnReady-to-serve chicken broth
1.50cChopped fully cooked smoked
Ham (about 8 ounces)
1.00cShredded jarlsberg or swiss
Cheese (4 ounces)
0.50cPine nuts, toasted
1.00tbChopped fresh chives

Instructions:
Heat margarine in 2-quart saucepan over medium heat.
Cook leeks and garlic in margarine about 2 minutes.
Stir in flour and pepper.
Stir in half-and-half and chicken broth.
Heat to boiling, stirring constantly.
Boil and stir 1 minute.
Stir in ham, cheese and pine nuts until cheese is melted and soup is hot.
Sprinkle with chives.
4 SERVINGS (ABOUT 1-1/4 CUPS EACH); 415 CALORIES PER SERVING.
To Microwave: Place leeks, garlic and margarine in 2-quart microwavable casserole.
Cover tightly and microwave on high 3 to 4 minutes, stirring after 2 minutes, until leeks are tender.
Stir in flour and pepper.
Stir in half-and-half and chicken broth.
Cover tightly and microwave on high 7 to 9 minutes, stirring after 2 minutes, until mixture is slightly thickened.
Stir in ham, cheese and pine nuts.
Sprinkle with chives.
