RECIPE FOR BRAISED DUCKLING W-SAUERKRAUT
Title: Braised Duckling W-sauerkraut

Ingredients:
2.00tbVegetable oil
1.004- to 5-pound duckling, cut
1.00cDry white wine or apple juic
0.33cCoarsely chopped fully cooke
Smoked ham
1.00tsCaraway seed
0.25tsPepper
6.00Juniper berries, crushed,
If desired
1.00cn(27 ounces) sauerkraut, drai

Instructions:
Braised Duckling with Sauerkraut.
Heat oil in Dutch oven.
Cook duckling in oil over medium-high heat about 15 minutes, turning occasionally, until brown on all sides; drain.
Mix remaining ingredients.
Pour over duckling.
Heat to boiling; reduce heat.
Cover and simmer over medium heat 1 to 1-1/4 hours or until juices run clear.
4 SERVINGS; 565 CALORIES PER SERVING.
