| 2.00 | tb | Vegetable oil | | 1.00 | | 4- to 5-pound duckling, cut | | 1.00 | c | Dry white wine or apple juic | | 0.33 | c | Coarsely chopped fully cooke | | | Smoked ham | | 1.00 | ts | Caraway seed | | 0.25 | ts | Pepper | | 6.00 | | Juniper berries, crushed, | | | If desired | | 1.00 | cn | (27 ounces) sauerkraut, drai |
Instructions: Braised Duckling with Sauerkraut.
Heat oil in Dutch oven.
Cook duckling in oil over medium-high heat about 15 minutes, turning occasionally, until brown on all sides; drain.
Mix remaining ingredients.
Pour over duckling.
Heat to boiling; reduce heat.
Cover and simmer over medium heat 1 to 1-1/4 hours or until juices run clear.
