| RECIPE FOR KEN'S SALSA |
Title: Ken's Salsa Serves: 8
Ingredients:
| 0.50 | c | Chopped green pepper | | 0.50 | c | Chopped red pepper | | 3.00 | sm | Jalepeno peppers | | 0.50 | c | Chopped white onion | | 4.00 | x | Green onions | | 2.00 | x | Minced garlic cloves | | 1.00 | cn | 14 oz crushed tomatoes | | 2.00 | x | Small tomatoes chopped | | 0.50 | c | Sliced black olives | | 1.00 | tb | Olive oil | | 1.00 | tb | Red wine vinegar | | 0.50 | ts | Salt | | 1.00 | ts | Ground cumin | | 1.00 | ts | Oregano | | | Juice of 1/2 lemon |
Instructions: Coarsley chop green pepper, red pepper, jalepeno pepper, onions,sliced olives, minced garlic, tomatoes into food processor bowl.
Pulse to chop into medium coarse pieces.
Add can of crushed tomatoes, olive oil, vinegar,lemon juice and spices.
Pulse again to mix.
Refrigerate at least 1 hour prior to serving, (preferably overnight).
Serve with Taco chips.
This is medium spicy.
If you like it spicier add more jalepeno peppers, dried red pepper flakes, or tabasco to taste.
*** I made this one up from a combination of about six different recipes and find that the addition of fresh tomatoes to it make it one of my favorites *** There is just no comparison to this salsa and the commercially produced salsa's in jars.
Make lots cause your going to like it.
