| RECIPE FOR EVA'S ZUCCHINI BREAD |
Title: Eva's Zucchini Bread Serves: 8
Ingredients:
| 3.00 | | Eggs | | 1.00 | c | Vegetable oil | | 2.00 | c | Granulated sugar | | 2.00 | c | Shredded zucchini | | 2.00 | ts | Vanilla | | 3.00 | c | Flour | | 1.00 | ts | Baking soda | | 1.00 | ts | Salt | | 0.50 | ts | Baking powder | | 1.00 | ts | Cinnamon | | 0.75 | c | Chopped walnuts | | 1.00 | c | Raisins (optional) |
Instructions: Beat the eggs.
Add the oil and sugar, and mix well.
Preheat the oven to 325 F.
Grease and flour 2 bread pans.
Mix all dry ingredients together, and add sugar/egg/oil mixture to it.
Fold in the zucchini and nuts (also raisins, if used) Bake 1 1/2 hours.
