| RECIPE FOR SCOTTISH EGGS |
Title: Scottish Eggs Serves: 4
Ingredients:
| 8.00 | | Hard cooked eggs, peeled, ro | | 0.25 | c | All purpose flour | | 1.50 | lb | Bulk pork sausage | | 1.00 | c | Dry bread crumbs | | 0.50 | ts | Ground sage | | 0.25 | ts | Salt | | 2.00 | | Eggs, beaten | | | Peanut oil for deep frying |
Instructions: Coat each hardcooked egg with flour.
Divide sausage into 8 equal parts.
Make patty out of each bit of sausage and use it to coat each egg completely.
Mix bread crumbs, sage and salt.
Dip sausage coated eggs into beaten eggs and roll in bread crumb mixture.
Heat oil to 375~ for dep frying.
Deep fry eggs 4 at a time, 7 minutes' minimum.
Drain.
Serve hot or cold.
