Recipe for Easy Beef And Broccoli Stir-Fry

1.50	lb	Beef top round steak, cut
		1" thick
3.00	tb	Soy sauce
3.00	tb	Dry sherry or beef broth
1.00	tb	Dark sesame oil
2.00	ts	Sugar
1.00	lg	Clove garlic, crushed
0.12	ts	Red pepper, crushed
3.00	c	Broccoli flowerets
2.00	tb	Vegetable oil
1.00	ts	Cornstarch
		Hot, cooked rice
0.25	c	Peanuts
2.00	tb	Sliced green onions

Instructions:
Slice beef steak diagonally across the grain into 1/8-inch strips.
Combine soy sauce, sherry (or broth), sesame oil, sugar, garlic and red pepper.
Place beef in plastic bag; add soy sauce mixture, turning to coat beef.
Close bag securely; marinate in refrigerator 30 minutes, turning once.
Cook broccoli in boiling water 2 minutes.
Drain; reserve.
Remove beef from marinade; reserve marinade.
Heat oil in large skillet or wok over medium-high to high heat.
Add beef; stir fry 2 minutes.
Add broccoli; continue cooking two minutes.
Combine cornstarch and reserved marinade.
Add to beef mixture.
Cook, stirring until sauce boils and thickens.
Serve over hot, cooked rice; top with peanuts and sliced green onions.
