| RECIPE FOR EASY BEEF AND BROCCOLI STIR-FRY |

Ingredients:
| 1.50 | lb | Beef top round steak, cut | | | 1" thick | | 3.00 | tb | Soy sauce | | 3.00 | tb | Dry sherry or beef broth | | 1.00 | tb | Dark sesame oil | | 2.00 | ts | Sugar | | 1.00 | lg | Clove garlic, crushed | | 0.12 | ts | Red pepper, crushed | | 3.00 | c | Broccoli flowerets | | 2.00 | tb | Vegetable oil | | 1.00 | ts | Cornstarch | | | Hot, cooked rice | | 0.25 | c | Peanuts | | 2.00 | tb | Sliced green onions |
Instructions: Slice beef steak diagonally across the grain into 1/8-inch strips.
Combine soy sauce, sherry (or broth), sesame oil, sugar, garlic and red pepper.
Place beef in plastic bag; add soy sauce mixture, turning to coat beef.
Close bag securely; marinate in refrigerator 30 minutes, turning once.
Cook broccoli in boiling water 2 minutes.
Drain; reserve.
Remove beef from marinade; reserve marinade.
Heat oil in large skillet or wok over medium-high to high heat.
Add beef; stir fry 2 minutes.
Add broccoli; continue cooking two minutes.
Combine cornstarch and reserved marinade.
Add to beef mixture.
Cook, stirring until sauce boils and thickens.
Serve over hot, cooked rice; top with peanuts and sliced green onions.
