| RECIPE FOR BROCCOLI & PINE NUTS |
Title: Broccoli & Pine Nuts Category: Diabetic Side Dishes Serves: 4
Ingredients:
| 2.00 | lb | Fresh broccoli; | | 1.00 | tb | Betty's Butter | | 3.00 | tb | Fresh lime juice; | | 0.25 | c | Toasted pine nuts(pignoli) |
Instructions: Trim off fresh stems and cut broccoli into flowerets about 3"" long.
Steam over boiling water until crisp-tender, about 2 minutes.
Drain and let dry on paper towels.
In a non-stick skillet and stir-fry 3 minutes.
Just before serving, toss pine nuts.
