| RECIPE FOR APRICOT CARROTS |

Ingredients:
| 4.00 | tb | Butter | | 4.00 | ea | Green onions, cut into | | | -julienne | | 12.00 | ea | Carrots, peeled, cut into | | | -julienne | | 4.00 | oz | Apricots, dried, cut into | | | -julienne | | 1.00 | tb | Honey | | 1.00 | tb | White wine vinegar | | 0.50 | c | Water | | | Salt & pepper to taste |
Instructions: Melt the butter in a large saute pan over medium heat.
Add the onions and carrots and saute for 3 to 4 minutes, until the onions are translucent.
Add the apricots, honey, vinegar and water and cook covered for 4 to 5 minutes.
Remove from the heat and season with salt and pepper.
Serve hot.
