RECIPE FOR A DIFFERENT RICE SALAD
Title: A Different Rice Salad

Ingredients:
1.00cBrown rice
1.50cWater
6.00tbVegetable oil
2.00tbOlive oil
3.00tbLemon juice
1.00tbRed wine vinegar
3.00eaGarlic cloves, minced
Salt & pepper
1.00tbSoy sauce
1.00pnCayenne, to taste
1.00tsBasil
0.50cPineapple, chopped
2.00eaScallions, chopped finely
0.25mdGreen bell pepper, diced
0.25cRaisins, optional
1.00mdCarrot, julienned

Instructions:
Rinse rice & drain well.
Combine rice & water.
Bring to a boil, reduce heat & simmer for 45 minutes, or until the rice is cooked & the water has been absorbed.
While the rice is cooking, prepare the vinaigrette.
While the rice is still hot, stir the rice into the vinaigrette & stir well.
Add the vegetables & mix.
Cover tightly & refrigerate until ready to serve.
VARIATION: Substitute the lemon juice with orange juice.
