| RECIPE FOR LEEKES - LEEKS WITH WALNUTS MEDIEVA |
Title: Leekes - Leeks With Walnuts Medieva Category: Medieval Ethnic Soup Serves: 4
Ingredients:
| 10.00 | ea | To 12 fresh leeks | | 1.50 | c | Beef broth | | 0.50 | c | White wine | | 0.25 | ts | Salt | | 1.00 | tb | Sugar | | 1.00 | c | Coarsely ground walnuts | | 1.00 | ts | Vinegar | | 0.50 | c | Walnuts; cut in quarters |
Instructions: Wash, trim, and coarsely chop with leeks.
Simmer slowly in broth and wine for 12 minutes, in a covered pot.
Add salt, sugar, ground nuts, and vinegar.
Simmer another 7 minutes, uncovered.
Spoon leeks into individual serving bowls.
Garnish each portion with quartered nuts.
Serve warm.
