| RECIPE FOR HORSERADISH-ENCRUSTED SALMON |
Title: Horseradish-Encrusted Salmon Category: Entree Serves: 4
Ingredients:
| 4.00 | | Salmon filets, about 6-oz ea | | 0.50 | c | Cornbread or corn muffin | | | Crumbs | | 2.00 | | Stems fresh thyme, picked | | | And minced | | | Zest of 1 orange, minced | | 1.00 | T | Or 2 finely grated fresh | | | Horseradish | | 0.50 | ts | Salt | | 0.50 | T | Melted butter, plus extra | | | For brushing salmon |
Instructions: Heat oven to 475F.
Combine dry ingredients, adjusting amount of horseradish to taste.
Stir in butter.
Place salmon on a parchment-lined or lightly oiled baking sheet.
Brush with reserved butter and pat 1/4 of crumb mixture on each filet.
Bake in center of oven for 8 to 12 minutes.
Crust should be lightly browned with salmon just cooked through.
