| RECIPE FOR BREAKFAST SAUSAGE WITH POTATO AND RED PEPPER |
Title: Breakfast Sausage With Potato And Red Pepper Category: Sausage Pork Potatoes Serves: 6
Ingredients:
| 1.00 | T | Olive oil | | 1.00 | lb | Best-quality pork sausage, | | | -cut into 1-inch thick | | | -slices | | 1.00 | lb | (2 large) russet potatoes, | | | -peeled and cubed | | 1.00 | lg | Sweet red pepper, seeded and | | | -cut into 1-inch pieces | | 1.00 | | Fennel bulb, trimmed and cut | | | -into 1-inch pieces | | | Salt | | | Freshly ground black pepper |
Instructions: Heat oil in large nonstick skillet over medium-high heat.
Add sausage and cook for 5 minutes or until beginning to brown.
Remove and discard as much oil as possible.
Add potatoes, red pepper, fennel, red onion, salt, and pepper.
Cover, reduce heat to medium-low, and cook, stirring frequently and spooning out any excess oil, for 45 minutes or until potatoes are tender and sausage is cooked through.
Remove cover, turn heat to medium-high, and cook for a few more minutes until potatoes are golden and lightly crisped.
