Ingredients:
| 5.00 | fl | Low-fat natural yogurt | | | Salt and Pepper | | 1.00 | | Garlic clove, peeled and | | | -crushed | | | 2 inch length cucumber, | | | -peeled and chopped | | 1.00 | tb | Freshly chopped mint | | 1.00 | tb | Freshly chopped parsley | | | Extra chopped mint, to | | | -garnish |
Instructions: Drain off any liquid from the yogurt, place in a bowl and whisk until smooth.
Add the remaining ingredients, except garnish, and mix well.
Turn into a serving bowl and chill for 30 minutes.
Sprinkle with extrac chopped mint to serve.
