| RECIPE FOR BLACK BEAN & SALSA SALAD |
Title: Black Bean & Salsa Salad Category: Diabetic Vegetarian Serves: 4
Ingredients:
| 0.50 | cn | (15 oz) corn; drained | | 0.50 | cn | (15 oz) Black beans; drained | | 0.75 | c | Celery; chopped | | 0.25 | c | Green onion; chopped | | 0.12 | c | Cilantro; chopped | | 6.00 | oz | Salsa; | | 0.12 | c | Red wine vinegar; |
Instructions: In a large bowl, comine first five ingredients; mix well.
Blend salsa and vinegar.
Pour over salad and toss well.
Cover and chill.
Spoon onto lettuce leaves.
