Ingredients:
| 2.00 | c | Cooked or canned black beans | | | -- (rinse & drained canned) | | 2.00 | c | Cooked rice | | 1.50 | c | Fresh cilantro | | 0.25 | c | Lime juice | | 0.75 | c | Oil | | 0.50 | c | Chopped onion | | 2.00 | | Garlic cloves; crushed | | | Salt | | | Freshly ground black pepper |
Instructions: Mix the beans, rice, and cilantro together in a bowl.
Place the lime juice in a small bowl and whisk in the oil.
Add the onion and garlic and toss with the rice and beans.
Add salt and pepper to taste.
