Ingredients:
| 2.00 | lg | Bananas | | 0.50 | c | Diced red bell pepper | | 0.50 | c | Diced green bell pepper | | 2.00 | | Jalapenos, seeded and minced | | 1.00 | tb | Fresh ginger, minced | | 3.00 | | Scallions, trimmed and | | | -finely chopped | | 0.25 | c | Chopped cilantro leaves | | 3.00 | tb | Fresh lime juice | | 2.00 | tb | Packed light brown sugar | | 0.25 | ts | Ground cardamom | | 1.00 | tb | Olive oil | | | Salt and pepper |
Instructions:
Combine all of the ingredients in a mixing bowl, and gently toss to mix.
Correct the seasonings, adding salt, lime juice, or sugar, to taste.
The salsa should be a little sweet and a little sour.
Best when served a couple hours after making.
Cover and refrigerate until serving time.
