| RECIPE FOR YOGURT TOMATO COOLER |

Ingredients:
| 1.00 | tb | Corn oil | | 2.00 | | Garlic cloves, crushed | | 0.50 | ts | Cumin seeds | | 1.00 | c | Plain yogurt | | 0.50 | ts | Paprika | | 2.00 | | Firm tomatoes, fine chopped | | 4.00 | | Green onions, finely chopped | | 2.00 | tb | Chopped fresh mint | | | Salt to taste | | | Fresh ground pepper to taste | | | Fresh mint sprigs |
Instructions: Heat oil in a small saucepan.
Add garlic and cumin seeds and cook very gently 2 minutes.
Remove from heat and cool.
In a bowl, combine cooled garlic mixture, yogurt, paprika and stir well.
Add tomatoes, green onions, chopped mint, salt and pepper.
Spoon mixture into a serving bowl and chill several hours.
Garnish with mint sprigs.
VARIATION: Omit tomatoes and onions and add 1 peeled seeded finely chopped or grated cucumber.
NOTE: Serve as an accompaniment to curries or as a tasty sauce with hot buttered Nan or pita bread.
