| RECIPE FOR TENDERLOIN OF PORK EMERIL |

Ingredients:
| 2.00 | lb | Pork tenderloin | | 1.00 | tb | Creole Seasoning | | 1.50 | c | Chicken stock |
Instructions: Servings: 4 1.
Remove all visible fat from the tenderloin.
Rub the seasoning over the pork on all sides.
Set on plate, cover loosely with plastic wrap, refrigerate and allow to marinate for 2 to 3 hours.

Preheat oven to 350 degrees.

Coat a large frying pan with no-stick spray.
Place over high heat for about 3 minutes.
Add pork and sear on all sides.

Transfer pork to baking dish, add stock.
Roast, turning ocassionally, and basting with stock, for 25 to 30 minutes.
The interior should be just pink.
5.
To serve, cut tenderloin into 1/2 inch slices.
