| RECIPE FOR SPINACH PUREE |
Title: Spinach Puree Category: Vegetarian Entree Serves: 1
Ingredients:
| 1.00 | lb | Fresh spinach, cleaned | | 0.25 | c | Water | | 0.50 | ts | Salt | | 1.00 | md | Garlic clove, minced | | 1.00 | ea | Black pepper to taste |
Instructions: Cook the spinach without added water in a covered pot fro just a few minutes - until tender & very bright green.
Transfer to a blender & with 1/4 cup water, puree till very smooth.
Place in a small bowl.
Thin to desired consistency & season with garlic, salt & pepper.
Serve on cold pasta or on hot baked potatoes.
