| RECIPE FOR SOUTHERN STYLE BARBECUED PORK |

Ingredients:
| 6.00 | lb | Lean spareribs | | 2.00 | tb | Salt | | 3.00 | tb | Prepared mustard | | 3.00 | c | Hot Barbecue Sauce (recipe | | | -separately) |
Instructions: 1.
Preheat oven to 350 degrees F.
Line a baking sheet with aluminum foil.
2.
In a large saucepan, cover ribs with water.
Add salt.
3.
Cover pan, and bring to a boil.
Let boil for 5 minutes.
4.
Drain; transfer ribs to the lined baking sheet.
5.
Use a pastry brush to coat ribs with prepared mustard on both sides.
6.
Bake on lower shelf of preheated oven for 15 minutes; remove from oven.
7.
Use the pastry brush to coat ribs generously with Hot Barbecue Sauce.
8.
Return to lower shelf and continue baking for 1 1/4 hours, or until the ribs are brown and tender; brush with barbecue sauce several more times during the baking period.
If ribs stick to the baking sheet, add a few teaspoons of warm water.
Serve hot, with fresh corn and sauerkraut, or with baked beans and coleslaw.
