| RECIPE FOR SAUSAGE CORN BREAD PIE |

Ingredients:
| 1.00 | lb | Fresh pork sausage, removed | | | -from the casing | | 1.00 | c | Yellow cornmeal | | 1.00 | c | Flour | | 0.25 | c | Sugar | | 4.00 | ts | Baking powder | | 1.00 | | Egg | | 1.00 | c | Milk |
Instructions: Sausage Corn Bread Pie Preheat oven to 425 degrees.
Grease a 9"" pie pan.
Brown sausage in a skillet.
Pour off drippings, reserving 1/4 c.
Sift together the cornmeal, flour, sugar, and baking powder.
Add the egg, milk and reserved drippings.
Mix and fold in the sausage.
Turn batter into pan.
Bake 25 minutes.
I like mine dribbled with pure cane syrup.
Serves 6 MY NOTE: I'll bet you could use vegetable oil instead of the drippings.
It would cut down on the taste, but it would also cut way down on the cholesterol in this recipe.
