| RECIPE FOR RAISIN NOUGAT |

Ingredients:
| 1.00 | c | Sugar | | 0.25 | c | White corn sirup | | 0.25 | c | Water | | 0.50 | lb | Marshmallow cream | | 2.00 | tb | Cocoa butter | | 1.00 | c | Raisins | | 0.25 | ts | Salt | | 0.50 | ts | Lemon flavoring with yellow | | | -coloring | | | OR | | 0.50 | ts | Raspberry flavoring with | | | -pink coloring |
Instructions: Boil sugar, salt, sirup, and water to hard crack stage (285 - 290 F).
Stir constantly.
Remove from fire.
Stir marshmallow cream in rapidly.
Add cocoa butter; mix well.
Add coloring, flavoring, and raisins.
Pour into well-buttered pan.
Spread 1/2 inch thick.
Cut in squares.
