| RECIPE FOR RAISIN BRAN MUFFINS |
Title: Raisin Bran Muffins Serves: 6
Ingredients:
| 1.75 | c | Whole wheat pastry flour | | 1.25 | c | Bran | | 1.00 | T | Baking powder | | 0.25 | t | Baking soda | | 0.33 | c | Butter | | 1.25 | c | Buttermilk | | 0.25 | c | Honey | | 3.00 | T | Molasses | | 0.75 | c | Raisins |
Instructions: 1.
Preheat oven to 375F and place rack in center of oven.
Line a muffin tin with paper liners.

Whisk together flour, bran, baking powder, baking soda, and salt in large bowl.
3.
Whisk together butter, egg, buttermilk, honey, and molasses in a small bowl and pour over dry ingredients.
With a few strokes of a spoon, stir together, then add raisins.
Stir just until ingredients are comined.
A Avoid overbeating.
4.
Spoon batter into muffin tins and bake 20 minutes, until puffed and lightly browned.
Remove from oven and serve at once with butter and jam.
