| RECIPE FOR OVEN FRIED CHICKEN |

Ingredients:
| 4.00 | oz | Skinless,boned chicken | | | -breasts | | 18.00 | | Saltine cracker | | | -squares,crushed | | 2.00 | tb | Parmesan cheese | | 0.75 | ts | Black pepper | | 0.50 | ts | EACH: basil,celery | | | -seed,onion | | | -powder,oregano,paprika | | 0.38 | ts | Salt | | 0.25 | c | Evaporated skim milk | | 1.00 | tb | Vegetable oil |
Instructions:
Combine cracker crumbs, cheese, black pepper, basil, celery seed, onion powder, oregano, paprika and salt in a bowl.
Dip chicken in evaporated milk, then coat with crumb mixture.
Place in a lightly greased shallow roasting pan.
Bake in a 400 degree oven for 30 minutes.
Brush with oil.
Bake 10 minutes longer.
Makes 6 servings.
