| RECIPE FOR MANDARIN ROCK CORNISH HENS |
Title: Mandarin Rock Cornish Hens Category: Chicken Serves: 4
Ingredients:
| 2.00 | | (1 1/2 pound) Cornish hens | | 0.50 | c | Water | | 3.00 | tb | Orange juice concentrate, | | | -thawed and diluted | | 2.00 | ts | Fines herbs | | 0.50 | ts | Chicken-flavored bouillon | | | -granules | | 2.00 | ts | Reduced-sodium soy sauce |
Instructions: Remove giblets from hens and discard; rinse hens with cold water.
Split hens lengthwise,using poultry shears.
Place in a 13x9x2 inch glass baking dish.
Combine remaining ingredients in a small sauce pan.
Bring to a boil, reduce heat, simmer 10 minutes.
Pour over hens.
Cover and chill about 8 hours.
Remove hens from orange juice marinade, reserving marinade.
Grill over medium coals or broil 15 minutes on each side or until done, basting frequently with reserved marinade.
