| RECIPE FOR HAM AND SPINACH POTATO CASSEROLE |

Ingredients:
| 0.25 | c | Finely chopped onion | | 0.12 | ts | Pepper | | 9.00 | oz | Pkg frozen chopped spinach, | | | -thawed, well drained | | | Or substitute fresh, steamed | | | -chopped spinach | | 1.00 | c | Sour cream | | 250.00 | g | Pkg cream cheese, softened | | 2.00 | | Eggs | | 3.00 | c | Cubed cooked ham | | 1.00 | c | Shredded Cheddar cheese |
Instructions: Servings: 8 about 4 - 5 cups mashed potatoes Heat oven to 350 F.
Butter 13 x 9 inch baking dish.
In medium bowl, combine onion, pepper, spinach, sour cream, cream cheese and eggs; mix well.
Spread mixture into bottom of buttered dish.
Sprinkle ham over spinach mixture.
Top with hot mashed potatoes.
Cover with foil.
Bake at 350 F for 35 to 40 minutes or until mixture just begins to bubble at edges.
Remove foil; sprinkle Cheddar cheese evenly over top.
Bake uncovered for an additional 3 to 5 minutes or until cheese is melted.
Let stand 10 minutes.
