| RECIPE FOR GOLDEN CRUST ZUCCHINI CAKE |

Ingredients:
| 3.00 | c | Sifted all-purpose flour | | 3.00 | c | Sugar | | 2.00 | ts | Baking powder | | 1.00 | ts | Baking soda | | 1.50 | ts | Cinnamon | | 0.50 | ts | Salt | | 4.00 | | Eggs | | 0.50 | c | Vegetable oil | | 3.00 | c | Zucchini, cut into 1" cubes | | 1.00 | c | Walnuts or pecans; whole |
Instructions: Sift dry ingredients into large mixer bowl.
Put eggs, oil and zucchini into blender container, cover and process at Grind 3 cycles or until finely chopped.
Add to dry ingredients.
Mix @ #5 until well mixed.
Stir in nuts.
Pour into well greased fluted tube pan.
Bake in a preheated 350 degree oven until done, about 1 hour.
Let cool 10 minutes; remove from pan and cool on wire rack.
