| RECIPE FOR FRIAR'S ZUCCHINI RELISH |
Title: Friar's Zucchini Relish Category: Relishes Serves: 8
Ingredients:
| 10.00 | c | Zucchini, ground | | 4.00 | c | Onions, ground | | 5.00 | tb | Salt | | 2.25 | c | Vinegar, white | | 4.50 | c | Sugar | | 1.00 | tb | Nutmeg | | 1.00 | tb | Mustard, dry | | 1.00 | tb | Tumeric | | 1.00 | tb | Cornstarch | | 0.50 | ts | Pepper | | 2.00 | ts | Celery seeds | | 1.00 | ea | Pepper, green, chopped | | 1.00 | ea | Pepper, red, chopped |
Instructions: Put zucchini, onions and salt in bowl and let stand overnight.
Drain and rinse in cold water.
Drain again.
Put in a large kettle with remaining ingredients.
Bring to a boil.
Simmer for 30 minutes.
Uncovered stirring occasionally.
Pour into 6-8 sterile pint jars.
Seal and process for 15 minutes in a boiling water bath.
