RECIPE FOR FRIAR'S ZUCCHINI RELISH
Title: Friar's Zucchini Relish

Serves: 8

Ingredients:
10.00cZucchini, ground
4.00cOnions, ground
5.00tbSalt
2.25cVinegar, white
4.50cSugar
1.00tbNutmeg
1.00tbMustard, dry
1.00tbTumeric
1.00tbCornstarch
0.50tsPepper
2.00tsCelery seeds
1.00eaPepper, green, chopped
1.00eaPepper, red, chopped

Instructions:
Put zucchini, onions and salt in bowl and let stand overnight.
Drain and rinse in cold water.
Drain again.
Put in a large kettle with remaining ingredients.
Bring to a boil.
Simmer for 30 minutes.
Uncovered stirring occasionally.
Pour into 6-8 sterile pint jars.
Seal and process for 15 minutes in a boiling water bath.
