| RECIPE FOR FRIAR'S ZUCCHINI BREAD |
Title: Friar's Zucchini Bread Serves: 16
Ingredients:
| 3.00 | ea | Eggs | | 1.00 | c | Oil | | 2.00 | c | Flour | | 0.25 | ts | Baking powder | | 2.00 | c | Sugar, brown or white | | 2.00 | c | Zucchini, peeled and grated | | 1.00 | ts | Salt | | 3.00 | ts | Cinnamon | | 3.00 | ts | Vanilla |
Instructions: Beat eggs, oil, sugar and zucchini.
Sift dry ingredients together and add to mixture.
Add vanilla.
Pour into 2 greased and floured loaf pans.
Bake at 350 degrees for 1 hour.
Test tops by touching with one finger before removing from oven.
Freezes excellent.
