RECIPE FOR CUCUMBER PACHADI
Title: Cucumber Pachadi

Ingredients:
2.00English cucumbers, peeled,
-diced
1.50tsSalt
1.00tbTamarind paste
2.00Green chiles, finely chopped
1.00tbBrown sugar
4.00tbChopped cilantro
1.00tbCorn oil
1.00tsMustard seeds
0.50tsFenugreek seeds
2.00Dried red chiles
0.25tsAsafetida

Instructions:
Mix cucumbers and salt in a colander and set aside for half an hour.
Squeeze out as much liquid as possible from cucumbers and mix with tamarind, green chilies, sugar and cilantro.
In a small saucepan or skillet, heat oil until hot.
Lower heat and add mustard seeds, fenugreek, red chilies and asafetida.
Cook, stirring, until mustard seeds crackle.
Add to cucumber mixture.
Serve cold.
