| RECIPE FOR CLAM HASH |
Title: Clam Hash

Serves: 6
Ingredients:
| 4.00 | tb | Butter | | 4.00 | sl | Bacon, chopped | | 1.00 | c | Onion, chopped | | 1.00 | c | Clams, minced, drained of | | | -liquid | | 2.00 | c | Potatoes, cooked, peeled and | | | -diced | | 0.25 | c | Parsley, chopped | | 0.25 | ts | Salt | | 0.12 | ts | Pepper | | 4.00 | tb | Grated Parmesan cheese |
Instructions:
Melt butter in skillet.
Add bacon and fry until crisp.
Drain bacon on absorbent paper.
Saute onion until transparent.
Add potatoes, clams, parsley, salt and pepper.
Press down with a spatula and cook over moderately high heat until bottom is brown.
Turn it with a spatula, mixing some of the crust throughout.
Press down again and cook until bottom is again brown.
Top with cheese and bacon bits.
Cover tightly and cook for about 1 minutes, until cheese melts.
Serve immediately, garnished with a parsley sprig.
