Ingredients:
| | Serving-pieces of chicken | | | -for 6 persons | | 4.00 | tb | Olive oil | | | Salt & pepper | | 1.00 | lg | Eggplant, peeled and cubed | | 2.00 | | Onions, chopped | | 1.00 | | Clove garlic, minced | | 3.00 | tb | Flour | | 1.50 | c | Chicken broth | | 0.50 | c | Red wine |
Instructions:
Servings: 6 Preparation: In casserole, heat oil and brown chicken; season if you like.
Remove.
Into remaining fat, stir eggplant, onion, and garlic; cook, covered, for 10 minutes, stirring frequently.
Add oil whenever needed.
Stir in flour, add broth and win and cook, stirring, until mixture thickens.
Replace chicken.
Bake, covered, at 350 degrees for 1 hour, or until chicken is tender.
Serve with: Pasta of some sort Mixed green salad
