| RECIPE FOR CHICKEN MUSHROOM SAUTE |

Ingredients:
| 0.50 | lb | Mushrooms | | 4.00 | | Chicken breast halves,boned | | | -and skinned | | 0.50 | c | Flour | | | Salt and pepper to taste | | 3.00 | tb | Olive oil | | 1.00 | tb | Minced green onion | | 1.00 | lb | Tomatoes,peeled and chopped | | | -(drained,if canned) | | 1.00 | ts | Dried tarragon |
Instructions: Clean and slice mushrooms.
Set aside.
Coat chicken breast all over with flour and shake off excess.
Season with salt and pepper.
Heat olive oil in a large skillet.
Add chicken breasts and brown on both sides.
Remove and set aside.
Add onions and cook over high heat 1 to 2 minutes or until tender.
Add mushrooms.
Stir rapidly, still cooking over high heat, about 2 minutes.
Add tomatoes and tarragon.
Place chicken on top and simmer 12 to 15 minutes.
Add water or chicken broth, if necessary to make a sauce.
Serve with rice or noodles and green beans.
Serves 4.
