Ingredients:
| 12.00 | oz | Pork tenderloin | | 1.00 | ts | Olive oil | | 12.00 | oz | Whole onion, chopped (or) | | 11.00 | oz | Chopped (ready cut) (2 1/4 | | | -to 2 1/2 cups) | | 2.00 | lg | Garlic cloves, minced | | 3.00 | tb | Chopped fresh basil | | 1.00 | tb | Chopped fresh oregano | | 1.00 | | 28 oz can no-salt added | | | -crushed tomatoes (or) | | 1.50 | lb | Fresh tomatoes | | 0.50 | c | Dry red wine | | 1.00 | ts | Sugar | | | TT (to taste) freshly ground | | | -black pepper | | 1.50 | c | Orzo |
Instructions: Serves 3 Trim any excess fat off tenderloin and cut into about 4 pieces.
In a hot non-stick skillet, saute pieces until they are brown on both sides, about 3-5 minutes.
Remove and set aside.
Add oil to skillet after removing pork; saute onion in oil until it begins to soften, about 3 minutes.
Add garlic and cook another minute.
Add herbs, tomatoes, wine, sugar and pepper to taste to skillet and cook over medium heat until orzo is ready.
Spoon pork & tomato sauce over orzo.
Serve.
