RECIPE FOR BRAISED PORK AND TOMATO SAUCE FOR ORZO
Title: Braised Pork And Tomato Sauce For Orzo

Ingredients:
12.00ozPork tenderloin
1.00tsOlive oil
12.00ozWhole onion, chopped (or)
11.00ozChopped (ready cut) (2 1/4
-to 2 1/2 cups)
2.00lgGarlic cloves, minced
3.00tbChopped fresh basil
1.00tbChopped fresh oregano
1.0028 oz can no-salt added
-crushed tomatoes (or)
1.50lbFresh tomatoes
0.50cDry red wine
1.00tsSugar
TT (to taste) freshly ground
-black pepper
1.50cOrzo

Instructions:
Serves 3 Trim any excess fat off tenderloin and cut into about 4 pieces.
In a hot non-stick skillet, saute pieces until they are brown on both sides, about 3-5 minutes.
Remove and set aside.
Add oil to skillet after removing pork; saute onion in oil until it begins to soften, about 3 minutes.
Add garlic and cook another minute.
Add herbs, tomatoes, wine, sugar and pepper to taste to skillet and cook over medium heat until orzo is ready.
Spoon pork & tomato sauce over orzo.
Serve.
