| RECIPE FOR APRICOT FOOL |
Title: Apricot Fool Serves: 6
Ingredients:
| 125.00 | g | (4 oz) dried apricots | | 1.00 | ts | Lemon juice | | 3.00 | tb | To 4 tb water | | 30.00 | g | (1oz) sugar | | 115.00 | ml | (1/4 pt) thick custard, | | | -sweetened | | 115.00 | ml | (1/4 pt) double cream | | | -(whipping cream) |
Instructions: Simmer apricots in water until soft.
Add lemon juice and sugar.
Puree fruit and let cool.
Add custard and mix.
Whisk the cream and fold into fruit mixture, but save out some for decoration, if desired.
Serve in small individual bowls, or use as centerpiece for a buffet dinner.
