| RECIPE FOR APRICOT CREAM WHIP (ALSO GOOD IN PEACHES) |
Title: Apricot Cream Whip (also Good In Peaches)
Serves: 6
Ingredients:
| 500.00 | g | (1 lb) dried apricots | | 125.00 | g | (1/2 cup) sugar or 4 Tbs | | | -honey (or to taste) | | 1.00 | tb | Lemon juice | | 250.00 | ml | (1 cup) cream (or substitute | | | -evaporated milk [?]) |
Instructions:
Pour boiling water over apricots and simmer in just enough water to keep them from burning, until soft.
Liquidize [I think they mean in a blender], add sweetening and lemon juice.
Bring to a boil to be sure all ingredients are thoroughly heated, cool, then fold in very stiff whipped cream.
