| RECIPE FOR YANKEE CORN BREAD |
Title: Yankee Corn Bread Serves: 8
Ingredients:
| 1.25 | c | Yellow cornmeal | | 1.25 | c | All-purpose flour | | 0.25 | c | Sugar | | 0.75 | ts | Salt | | 4.00 | ts | Baking powder | | 1.50 | c | Milk | | 0.25 | c | Shortening, softened | | 1.00 | | Egg |
Instructions: Preheat oven to 450 degrees.
In a large mixing bowl, sift together cornmeal, flour, sugar, salt, and baking powder.
Add milk, shortening and egg.
Beat with a rotary beater or wire whisk until smooth, about 1 minute.
Pour into well-greased 8-inch-square baking pan.
Bake 20 to 25 minutes.
Serve Warm with butter.
Makes 8 or 9 servings.
