RECIPE FOR APRICOT MUFFINS
Title: Apricot Muffins

Serves: 8

Ingredients:
0.50cDried Apricots, finely
snipped
0.33cUnsweetened Apple Juice
1.00cWhole Wheat Flour
2.00tsBaking Powder
0.25tsBaking Soda
0.25tsGround Cardamom
0.33cWalnuts, chopped
3.00tbVegetable Oil
1.00tbSugar
1.00Egg

Instructions:
Soak the apricots in the apple juice for 10 minutes.
Combine the flour, baking powder, baking soda, cardamom and walnuts in a bowl.
Beat together the oil, sugar and egg.
Add the apricots, with the juice, and egg mixture to the flour.
Mix just until all the ingredients are blended.
Spoon into oiled muffin tins, or paper muffin cups, filling three--fourths full.
Bake in a 350-degree oven for 10 to 15 minutes, or until golden brown.
