RECIPE FOR APPLE AND OAT BRAN MUFFINS

Ingredients:
1.25cWhole Wheat Flour
0.33cPacked Brown Sugar
0.25tsBaking Soda
0.25tsGround Nutmeg
1.00cButtermilk
2.00tbCooking Oil
1.00cOat Bran
2.50tsBaking Powder
0.25tsSalt
0.25tsCinnamon
2.00xEgg Whites
0.75cShredded, peeled Apple

Instructions:
In a med bowl stir together flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg, and cinnamon.
Set aside.
In a small bowl combine buttermilk, egg whites, and oil, Add to dry ingredients; stir just till moistened.
Stir in shredded apple.
Store batter, tightly covered, in the refrigerator for up to 5 days.
To bake, spray muffin cups with non-stick spray coating.
Spoon about 1/4 cup batter into each muffin cup.
Bake in a 375 deg F oven for 18-20 minutes or till a toothpick inserted near the center comes out clean.
Makes 12 muffins.
