RECIPE FOR THAI PASTA AND SEAFOOD SALAD

Ingredients:
---------PEANUT GINGER DRESSING ---------
0.25cSmooth or chunky peanut
butter
0.25cHot water
0.33cCider vinegar
2.00tbSoy sauce
1.00tbGrated fresh ginger root
1.00tsMinced garlic
---------SALAD ---------
7.00cChilled cooked shrimp and
scallops
3.00mdKirby pickling cucumbers,
halved lengthwise, seeded
and thinly sliced crosswise
2.00mdRed bell peppers, cored,
seeded and thinly sliced
1.00cCilantro leaves, chopped
(optional)
0.50cSliced scallions

Instructions:
Peanut-Ginger Dressing: Whisk peanut butter and hot water in a large bowl until smooth.
Whisk in vinegar, soy sauce, sugar, gingerroot and garlic.
Add remaining ingredients.
Toss to mix.
Makes about 12 cups/6 servings.
For a spicier version, sprinkle with crushed red pepper.
